Categories Cooking Ingredients 1 lb Spaghetti 4 oz Feta Cheese, Crumbled 1/2 Cup Mozzarella Cheese, Shredded 1/3 Cup Walnuts, Finely Chopped 1 Medium Sweet Onion, Chopped 1 Tbsp Fresh Parsley, chopped Tip: I used a "T" shaped noodle for this recipe. Tip: I used a regular sized spaghetti squash. Tip: I also got a bigger package of feta cheese as it was on sale. Tip: Walnuts were also on sale so I bought those as well. Instructions Boil water to cook your spaghetti squash. I put the squash in the boiling water around 15 minutes before I was done boiling my noodles. After you boil your water for the noodles, place 1/2 cup of uncooked pasta, 2 tablespoons of oil to cook with, 3 tablespoons of chili flakes, and 1 tablespoon of salt into the boiling water. Cook your pasta for 10 minutes. When it is done cooking strain out the spaghetti and set it aside in a bowl. Cook your onions until soft, add 1 tablespoon of garlic powder along with salt and pepper to taste. Put your walnuts into a small bowl and use a potato masher to mash them into a fine powder. Drain the oil from the pan. Add the onion, garlic, and walnuts to the pan you cooked your spaghetti in. Add 1/2 cup of water to your pasta sauce and let it simmer for about an hour or so. Pour this mixture over the noodles in a bowl along with 2 tablespoons of red wine vinegar, 1 tablespoon of sugar, 1 teaspoon of fresh parsley, 1/2 teaspoon cornstarch, 1/2 cup milk, salt & pepper to taste.
